When you cut up the prey you've killed, you can get the bones out in pretty good condition. It's more a pastime than a job, but some hunters like to keep these bones to make into needles. I think it's a way for them to get a good dressmaker's attention, really. Because everyone knows that the ranger's job is hard enough, without having to mend your own clothes as well.
